The Headspace Volatiles of the Asian Truffle Tuber indicum Cooke et Mass

The main headspace volatiles of Tuber indicum (characterized by DNA analysis) were determined by headspace analysis using GC/MS. The major component was found to be 3-methylbutanol. Unlike other tubers, no sulfur compound was found, and the volatiles composition poorly changes on storage
